Bacon & Broccoli Frittata Muffins

Prep Time: 10 Minutes        Cook Time: 20 Minutes

Ingredients

  • 6 Large eggs
  • ½ Cup bacon, chopped
  • 1 Cup broccoli chopped   
  • ¼ Cup Heavy cream
  • 1 Cup grated cheddar  
  • Salt & Pepper to taste

Instructions

  • Preheat oven to 350 degrees
  • Cook & chop bacon
  • Cook & chop broccoli
  • Mix together eggs, cream, salt & pepper in a bowl til blended together
  • Add the bacon, broccoli & cheddar cheese to egg mixture
  • Spray muffin pan with your choice of cooking spray (olive, oil, coconut, or avocado)
  • Pour mixture evenly into muffin pan (make sure each muffin has around the same bacon, broccoli, & cheddar)
  •  Bake for about 20 minutes or until the eggs have set & the edges are pulling away from the tin
  • Cool for 5-8 minutes, then run a butter knife around the edges to remove

  • Makes 8 Muffins, 4 servings
