Chicken Casserole

Prep Time: 10 Minutes         Cook Time: 45 Minutes

Ingredients

  • 2 Tbsp Green pesto
  • ½  Lemon, just the juice
  • 1 ½ Lbs Chicken
  • 3 Tbsp Butter
  • 1 Leek
  • 4 oz Cherry tomatoes
  • 7 oz Cheddar cheese, shredded
  • 1 Cup Coconut milk, canned
  • 1 Lb Cauliflower, chopped

Instructions

  1. Preheat oven to 400 degrees
  2. Mix coconut milk, pesto, & lemon juice
  3. Heat butter (don’t use all of it you will need some later) in frying pan & cook chicken sprinkle some salt & pepper cook till chicken is golden brown
  4. Grease 9x13 baking dish & pour in coconut milk mixture
  5. Chop the cauliflower into florets, chop the leek & cherry tomatoes, top chicken with the chopped veggies  
  6. Sprinkle with cheese & place on the center rack & bake for 30 minutes or until chicken is fully cooked (if chicken needs more time cover with foil so you don't burn the casserole)
