Ingredients
- 2 Eggs
- 1 Fresh Jalapeño, minced
- Fresh Cilantro
- ½ Yellow Onion, chopped
- 2 Garlic Cloves, Minced
- ½ Orange Bell Pepper, chopped
- 1 Tomato, diced
- ½ Avocado
Instructions
- Heat half of the coconut oil in a skillet over medium heat.
- Sauté garlic, bell pepper, onion & jalapeño till they are to your liking
- Add in diced tomatoes and sauté till tomatoes are tender then set aside.
- Heat the remaining coconut oil in different non stick frying pan over medium heat
- Cook the eggs in the coconut oil til the white is cooked all the way through
- Plate your eggs and top with your homemade salsa
- Slice avocado & plate it next to you eggs
- Sprinkle a pinch of fresh cilantro & enjoy
