Keto Huevos Rancheros

Prep Time: 15 Minutes    Cook Time: 15 Minutes


  • 2 Eggs
  • 1 Fresh Jalapeño, minced
  • Fresh Cilantro
  • ½ Yellow Onion, chopped
  • 2 Garlic Cloves, Minced
  • ½ Orange Bell Pepper, chopped
  • 1 Tomato, diced
  • ½ Avocado


  1. Heat half of the coconut oil in a skillet over medium heat.
  2. Sauté garlic, bell pepper, onion & jalapeño till they are to your liking
  3. Add in diced tomatoes and sauté till tomatoes are tender then set aside.   
  4. Heat the remaining coconut oil in different non stick frying pan  over medium heat
  5. Cook the eggs in the coconut oil til the white is cooked all the way through
  6. Plate your eggs and top with your homemade salsa  
  7. Slice avocado & plate it next to you eggs
  8. Sprinkle a pinch of fresh cilantro & enjoy
