Mexican Cauliflower Rice

Prep Time: 10 Minutes                          Cook Time: 10 Minutes 


  • 1 Lb Ground beef
  • ½  Cup Onion, diced
  • ½ Red pepper, diced 
  • 3 Tbsp Homemade Taco seasoning
  • 12 oz Cauliflower     
  • 1 ½ Cup Cheddar cheese, shredded  
  • ½ Cup Bone broth, chicken
  • 1 Avocado, cubed


  1. Brown the ground beef in a large skillet over medium heat
  2. When the ground beef is almost done add in the onions & red pepper
  3. Once the meat is fully cooked add in the taco seasoning and stir
  4. Add the cauliflower rice and tomatoes stir it all together
  5. Pour the bone broth in and bring to a simmer
  6. Reduce heat to a medium-low and continue to cook til the cauliflower rice starts to get soft ( about 10 mins if you are using frozen cauliflower rice)
  7. Once the rice is done sprinkle shredded cheese over the skillet cover remove from heat and let sit for 3-5 minutes
  8. After it is plated add the cubed avocado and enjoy
